Chia Seed Pudding 3 Ways

What’s your favorite dessert? When I was kid I would eat the smallest dinner possible and ask “can I be full yet?” to get permission to move on to dessert.  My favorite was mint chocolate chip ice cream.  Now, fast forward 15 years later, I’m eating chia seed pudding with matcha powder in it for dessert.  Chia seed pudding has been my go to dessert recently for a few reasons.  First, it’s super easy to make in bulk – just whip up 3-4 portions on Sunday and you are set for the week! Second, it’s so easy to customize! Third, it’s lower in sugar than my old stand by ice cream and it’s super filling.

Chia seeds are a nutrient powerhouse.  Just 2 tablespoons of these little black seeds contain about 7-11g fiber, 3g protein, and 115 mg Calcium all for only about 90 calories! Note: the nutrition facts may vary from brand to brand, I had the 365 Everyday Value brand on hand while writing this post.

Ingredients

The Base:

  • 1 cup unsweetened coconut milk yogurt I like to use SoDelicious Coconut Milk Yogurt
  • 1 tbsp chia seeds
  • 1 packet stevia or 1 tsp maple syrup (optional)

Option 1: Chocolate Chia Seed Pudding

  • 1 tbsp unsweetened cocoa powder
  • 1/2 tsp cinnamon

Option 2: Matcha Chia Seed Pudding

  • 1-2 tsp matcha powder

Option 3: "Plain" Chia Seed Pudding

  • 1 tsp cinnamon

Toppings:

  • 1 tbsp cacao nibs
  • 1/4 cup granola of choice
  • 1 tbsp shredded coconut, unsweetened

Instructions

  1. In a mason jar or small tupperware bowl combine the coconut milk yogurt (or your yogurt of choice), chia seeds, and sweetener of choice. 

  2. Next, choose option 1, 2, or 3 and add the specific ingredients.  

  3. Mix thoroughly and place in the fridge for at least 20 minutes, or overnight - this allows the chia seeds to soak up some of the moisture and thicken the "pudding."

  4. When ready to eat, remove from the fridge and top with cacao nibs, shredded coconut, and granola and enjoy! 

Surprisingly, adding the matcha powder to chia seed pudding has become my favorite! I paired it with my Matcha Bliss Balls for a more dense dessert last night.
