Chia Seed Pudding

Ingredients

The Base:

  • 1 cup unsweetened coconut milk yogurt I like to use SoDelicious Coconut Milk Yogurt
  • 1 tbsp chia seeds
  • 1 packet stevia or 1 tsp maple syrup (optional)

Option 1: Chocolate Chia Seed Pudding

  • 1 tbsp unsweetened cocoa powder
  • 1/2 tsp cinnamon

Option 2: Matcha Chia Seed Pudding

  • 1-2 tsp matcha powder

Option 3: "Plain" Chia Seed Pudding

  • 1 tsp cinnamon

Toppings:

  • 1 tbsp cacao nibs
  • 1/4 cup granola of choice
  • 1 tbsp shredded coconut, unsweetened

Instructions

  1. In a mason jar or small tupperware bowl combine the coconut milk yogurt (or your yogurt of choice), chia seeds, and sweetener of choice. 

  2. Next, choose option 1, 2, or 3 and add the specific ingredients.  

  3. Mix thoroughly and place in the fridge for at least 20 minutes, or overnight - this allows the chia seeds to soak up some of the moisture and thicken the "pudding."

  4. When ready to eat, remove from the fridge and top with cacao nibs, shredded coconut, and granola and enjoy!
