Matcha was definitely one of the biggest nutrition trends of 2017.  In an effort to eat healthy while also running around doing 100 things Michael and I have been trying to meal prep more consistently, so far we are 2 weeks into 2018 and we are still doing it! “Energy Balls” are a ever popular easy grab and go trend.  If you’ve been following along with me for a while you know that I’ve been trying to stick matcha into anything I can, I love the earthy flavor and the vibrant green color.  Enter: this Matcha Bliss Ball recipe by Vital Proteins.  It’s easy, delicious, and grain/refined sugar free!

Matcha Bliss Balls

Matcha Bliss Balls

Servings 12 balls

Ingredients

  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 1/2 cup shredded unsweetened coconut
  • 1 cup Medjool dates, pitted
  • 1/4 cup maple syrup
  • 1 scoop Vital Proteins Original Matcha Collagen
  • 2 tbsp cacao nibs or vegan chocolate chips

Instructions

  1. In a food processor or high-speed blender, combine the almond flour, coconut flour, shredded coconut, and Matcha Collagen.

  2. After thoroughly mixed, gradually mix in the maple syrup and the dates. After fully mixed, pulse in the cacao nibs until thoroughly combined.

  3. Scoop one tablespoon of the mixture at a time into your hands. Form into a ball shape, and place on a baking sheet.

  4. Refrigerate for 20-30 minutes, and serve. Store in an air-tight container in the fridge for up to one week.

Recipe Notes

If you don't have Matcha Collagen you can also use 1 scoop of Vital Proteins Collagen Peptides + 1-2 tsp Matcha Powder in this recipe.
