Add olive oil to a cast iron skillet and heat on medium high heat.
Cut sweet potatoes into small cubes (about ½” x ½” x ½”) and add to the skillet
Toss sweet potatoes to coat with olive oil and add salt and pepper to taste. Add any other spices you would like (we love rosemary).
Cook on medium heat for about 20-30 minutes, stirring frequently to prevent potatoes from sticking to the skillet. Add more oil if needed (if your sweet potatoes are sticking to the skillet).
Sweet potatoes are finished cooking when you can easily puncture them with a fork and the outside is browned and crispy.
Add to your favorite breakfast or dinner. We love having ours with dinner in place of fries with ketchup.
